Default A good waffle recipe for a person with diabetes and high cholesterol? - 04-24-2009, 01:08 AM

My husband and I bought each other a waffle maker for Christmas. I am off work this week, but he is not. I made some waffles and took him breakfast yesterday morning. Afterward, I felt bad because a man he works closely with was disappointed because I didn't bring him anything. He is a diabetic and has high cholesterol. I would love to take him something, but I'm not familiar with diabetic safe recipes. Thanks in advance for your help!

Have your waffles with wine!!! I know it sounds strange but scientist recently found out that wine helps with diabetes! Here, I go ogled an article for you! Hope it helps.

A year ago a friend of mine was diagnosed with diabetes, so he and I became diet partners and I started following more of a diabetic diet (reduced cabs). I lost 40 of the 50 I was trying to lose, he lost 80 pounds (of his 100). I was shocked at how many products are available. With regards to waffles, that's easy, there is a product called "crab quick" http://www.tovaindustries.com/carbalose/page1.html
use this to make waffles for him, it's really good, and what matters to a diabetic is that the "net cabs" are low (2g per serving). I also have used apple sauce (Motts makes a Sugar Free version) to dip my waffles in, add a little cinnamon (100% diabetic friendly), and you have a great meal!
As an aside, if your husband's work friend doesn't know about a product called "dream fields"... his world will completely change, it's a pasta that is the only pasta I have found that is diabetic friendly (most diabetics kiss the idea of pasta goodbye because of the sugar). Waffles Recipe - Healthy Diabetic Recipes
Recipe Ingredients:

1 3/4 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
2 large eggs, separated
1 1/4 cups fat-free milk
1/3 cup canola or corn oil

Recipe Instructions:
Preheat a waffle iron.
Sift the flour, baking powder, and salt into a large bowl.
Combine the egg yolks, milk, and oil in a small bowl; stir into the dry ingredients.
In a small bowl, beat the egg whites until stiff; fold into the batter.
Spray the hot waffle iron with nonstick pan spray. Pour in the batter, using a scant 1/2 cup per waffle. Bake until the waffles are crisp and brown.

This recipe yields 8 servings. Serving size: 1 waffle.

Exchanges Per Serving: 1 1/2 Starch, 2 Monounsaturated Fat.

Nutrition Facts: Calories 217; Calories from Fat 99; Fat 11g; Saturated Fat 1g; Cholesterol 54mg; Sodium 227mg; Carbohydrates 24g; Dietary Fiber 1g; Sugars 2g; Protein 6g.

Comments: Waffle batters are usually richer than pancake batters and so yield a crisper product. Separating the egg whites from the yolks, as recommended in this recipe, also helps to make the waffles lighter.

Oatmeal Waffles Recipe from the diabetic recipe collection at Information About Diabetes.com

Ingredients:

2 cup rolled oats
2 cup water
1 medium banana
1 tbsp raw sugar, or other sweetener
1/4 tsp salt
1 tsp vanilla extract
Preparation:

Place all ingredients in a blender and blend until smooth. Let stand a few
minutes; if batter becomes too thick, add enough additional water to make
batter easily pourable. Pour into a heated, oil-sprayed waffle iron. Cook
for 10 minutes without lifting the lid.

Per serving:390 calories 73 g carbohydrate 13 g protein 5.5 g fat (found naturally in
oats) 10 g fiber

Low Fat Waffles/Pancakes Recipe

Makes 20 servings


Waffle Batter using low fat, low cholesterol ingredients

Ingredients
2 cups flour
4 tsp baking powder
1/2 tsp salt
1 tbsp sugar
1 tbsp applesauce
4 egg whites
2 cups skim milk
Directions
1. mix first four ingredients
2. add remaining ingredients. mix well.
3. pour 1/4 cup batter onto skillet/waffle iron.

HDL is a type of cholesterol which is required or is necessary for human body as it reduces the chances of blockage of arteries whereas LDL is a type of cholesterol which can be harmful to human body. Cholesterol is a fatty substance which gets blocked in the arteries as it is not soluble in blood. This can lead to problems like heart diseases and increases the chances of heart attacks. Hence managing the cholesterol level below the normal limit is very important.
