I know most of the nutrients are in or just under the skin.

I'm wondering this for both white potatoes and sweet potatoes. Please answer for each separately. And if you can, describe the nutrition. For the potatoes without anything added to them. Thank you.

I recently watched a TV show that featured a woman who ate nothing but french fries for 26 years and wondered how she survived and stayed healthy as she seemed to be. Or maybe she was taking multivitamins and I did not hear about that on the show. And I want to know if I would get much nutrition whenever I eat french fries or other potatoes without skin. And I might start making sweet potatoes, which are usually without the skin unless they are baked.

not really... i heard that the skin of the veggie/fruit is just as important as the veggie/fruit itself.

yes, both kinds of potatoes have good nutrition without the skin.
The one thing that is lower in a potato cooked without the skin is potassium. IT will leach into the water the potatoes are cooked in. This can be significant if you were on a low potassium diet.
There is more fiber when cooked with the skin.

only 1 % of daily iron is lost when potatoes are cooked without skin.

truth is if you take the skin off the potatoes you taking most of the iron away from it....
