I am easily fatigued, have gained a lot of weight lately (even though I haven't been eating much), I feel like there's something in my throat often, I'm always cold. I have lots of symptoms of hypothyroidism, but my labs are okay. What would happen if I took some thyroid medicine?

You need to look for other problems. Taking thyroid replacement might speed your metabolism for a while, but the added thyroid will cause your own thyroid to slow down production. This is called feed-back inhibition.
